Position Summary: Provide technical and administrative assistance to the Sous Chef and to prepare and portion food for the resort’s food and beverage outlets.

Essential Functions:

  • Possess a solid background in making soups, stocks, grilling and roasts with the knowledge of varied methods and techniques to prepare food.
  • Knife handling skills.
  • Be able to assume control of the kitchen in the absence of a Sous Chef.
  • Assist Sous Chef in developing additions to menu.
  • Assist in training and updating staff.
  • Responsible for product availability for restaurant and banquet items.
  • Direct proper sanitation of kitchen facilities and equipment.
  • Ensure that all kitchen equipment is in good working order.
  • Direct proper maintenance of kitchen coolers and freezers (food product rotation, sanitation, labeling, etc.)
  • Monitor and control all food production.
  • Ensure safe working environment and techniques in the kitchen.
  • Model and promote good working relationship with Front of the House managers and staff.
  • Other duties as assigned.

Candidate Profile:

Education and Experience

  • 1 to 2 years college or university programed preferred or 2 to 4 years related experience and/or training; or equivalent combination of education and experience.
  • Ability to organize and manage multiple priorities.
  • Excellent interpersonal and communications skills.
  • Ability to perform as a strong team player.

 

Physical Demands

  • Ability to stand for extended periods of time.
  • Ability to bend, lift and carry heavy objects.

Preferred Traits

  • Broad and in-depth professional knowledge and skills in food preparation, cooking and presentation; good knife skills and knowledge of food and its characteristics, especially its shelf life.
  • Ability to motivate others and lead people in the area of correct procedures and follow through.
  • Ability to deal effectively with a variety of company personnel and outside vendors.
  • Good personal hygiene.
