Job Description

We are currently seeking a passionate and dynamic guest focused Finance professionals who pride themselves on their ability to deliver extraordinary levels of customer service and provide creative solutions to our guests.

Reporting to the Director of Food and Beverage as the Food & Beverage Cost Controller, you are responsible to liaise closely with the Food & Beverage Department on various operational and cost related issues & your role will include key responsibilities such as:

•Budget and Monthly Forecasting

•Management of POS and Inventory systems, participate and lead monthly inventories

•Work with the Executive Chef on Recipe costings and suggested selling price

•Perform test checking on the receiving of goods at the hotel to ensure that the procedures are followed correctly

•Prepare daily flash report of food costs and verify daily outlet void control sheets

Prepare weekly analysis of outlet costs and sales mix

•Randomly test the inventory of outlets by reconciling the opening stock with the closing stock, taking account of store issues and sales

•Update online content and calendar of events

•Oversight of outlet payroll, weekly reports and forecasting for leaders based on percentage of sales and productivity

•Coordinate communication/control with restaurant management and finance department to sort out issues pertaining to ‎F&B. (short/over report, Banks…) Monthly.

•Prepare holiday/special events P&L’s as directed

•Follow the chart of accounts and ensure that all invoices are coded properly to the different areas.‎


•Control all transfer/movement/borrowing of food and beverage between different revenue centers.



Education, Qualifications & Experiences

You should have a degree in hotel management or accounting and at least 2 years previous experiences within a hotel environment. Excellent verbal and written English communication skills, a sound knowledge of F&B cost controlling and computer literacy is necessary, while knowledge of Opera/Delphi, Micros, POS and Kronos System is an asset.
